  • Turn the thermostat to set the desired temperature. See recipe book for recommended temperatures. The green light goes off once the temperature has been reached.
  • Fill smoking pan with sawdust as required and place pan into heating element in the appliance.
  • Insert the grease tray into the lower position of the appliance, place the food to be smoked on the correct grid and insert above the grease tray.
  • Carefully close the appliance using the knob on the door.
  • Turn the timer as far as it will go. The red light below indicates that the heating element is now causing the sawdust to smoulder, thus generating smoke. When the timer stops, it automatically switches off the heating element and the red light goes off.
  • Open the appliance gently so that the remaining smoke and vapour can escape upward.
